Before You Start

Pat the pork dry, warm the rice, shred the cabbage, and slice the scallions so they are ready to go.

How To Make It
  1. Season the pork and sear it over medium high, turning to brown all sides, 10 to 12 minutes, until it reaches 145°F in the center, then rest it a few minutes and slice.
    145°F
  2. Cook the shredded cabbage in the same pan, 4 to 5 minutes, until it wilts and softens but keeps a little bite.
  3. Add the spinach and cook, 1 to 2 minutes, until it wilts.
  4. Add the tamari, ginger, and sesame oil and toss, about 1 minute, until the vegetables are glossy and coated.
  5. Serve the sliced pork and vegetables over the warm brown rice and top with sesame seeds and scallion.
Fix It: If the cabbage turns soggy, cook it hotter and faster next time so it keeps its crunch.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 16 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
