What You Need

Before You Start

Pat the sirloin dry and season it, shred the cabbage, grate the ginger and slice the scallions.

How To Make It
  1. Season the beef sirloin, warm a pan over medium high, and sear 3 to 4 minutes a side, until browned and it reaches 145°F in the center, then set it aside.

  2. Rest the sirloin 3 minutes, then slice it thin against the grain.
  3. Cook the shredded cabbage in the same pan 4 to 5 minutes, until wilted and just tender.
  4. Add the spinach and cook 1 to 2 minutes, until wilted.
  5. Glaze the vegetables with the tamari, ginger, and sesame oil, 1 minute, until glossy, then top with the sesame seeds and scallion.
  6. Serve the beef and vegetables over the cooked rice.
Fix It: If the cabbage steams pale instead of searing, spread it out over higher heat so it picks up a little color.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 16 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
