What You Need

Before You Start

Pat the pork dry, mince the garlic, dice the zucchini and tomato, cut the broccoli into florets, and have the rice warm.

How To Make It
  1. Season the pork and sear it in the olive oil, turning to brown all sides, 10 to 12 minutes, until it reaches 145°F in the center, then set it aside to rest.

  2. Add the broccoli to the pan and cook, 4 to 5 minutes, until bright green and just tender.
  3. Add the zucchini and cook, 3 to 4 minutes, until softened and lightly browned.
  4. Add the garlic and tomato and simmer, 3 to 4 minutes, until the tomato breaks down into a light sauce, then fold in the basil.
  5. Slice the pork and serve it with the vegetables and tomato over the rice.
Fix It: If the sauce is thin, simmer it a minute or two longer uncovered so it clings to the pork.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 18 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
