What You Need

Before You Start

Pat the pork tenderloin dry and season it, mince the garlic and ginger, rinse the spinach, and chop the cilantro so the plate finishes together.

How To Make It
  1. Sear the pork tenderloin in a hot pan, 8 to 10 minutes, turning to brown all sides, until it reaches 145°F in the center, then set it aside to rest.

  2. Cook the cauliflower rice in the same pan, 4 to 5 minutes, until it is just tender and steaming.
  3. Add the spinach and cook, 2 to 3 minutes, until it wilts down.
  4. Bloom the cumin, smoked paprika, garlic, and ginger in a little oil, about 1 minute, until fragrant, then stir in the yogurt off the heat so it does not split.
  5. Slice the pork, spoon it and the vegetables over the brown rice, scatter the cilantro, and serve warm.
Fix It: If the yogurt curdles into the spices, the pan was too hot; stir it in off the heat next time so it stays creamy.

  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 19 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
