What You Need
Makes 2 plates Batch it
Before You Start

Pat the sirloin dry and season it, cut the cauliflower into florets, rinse the spinach, mince the garlic and grate the ginger, and have the cooked rice ready to serve underneath.

How To Make It
  1. Sear the beef sirloin in a hot pan over medium high heat, 3 to 4 minutes a side, until deeply browned and it reaches 145°F in the center.

  2. Move the beef to a plate and rest 3 minutes, then slice it thin.
  3. In the same pan over medium heat, cook the cauliflower with a splash of water 6 to 7 minutes, until fork tender and lightly golden.
  4. Add the cumin, paprika, garlic, and ginger and cook about 1 minute, until fragrant, then add the spinach and cook 1 to 2 minutes, until it wilts.
  5. Turn off the burner and stir in the yogurt off the heat so it stays smooth and does not curdle.
  6. Spoon the beef and vegetables over the rice, scatter the cilantro on top, and serve.
Fix It: If the yogurt splits into grains, it got too hot, so always stir it in off the heat with the pan cooled a little.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 16 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
