Before You Start

Use chicken breast you cooked earlier in the week, sliced thin, and squeeze the cooked spinach dry so the thin crust stays crisp.

How To Make It
  1. Heat the oven to 450°F and set the tortilla and the broccoli florets on a sheet pan.
  2. Cook the mushrooms and spinach in a dry skillet over medium high heat 3 to 4 minutes, until the mushrooms are browned and the spinach wilts.
  3. Spread the crushed tomato over the tortilla, then top it with the mushrooms and spinach, the chicken, the mozzarella, the turkey pepperoni and the oregano.
  4. Bake 8 to 10 minutes, until the cheese is bubbling, the crust is crisp at the edges and the chicken reads 165°F.
    165°F
  5. Cut the pizza into 4 slices and serve it with the roasted broccoli from the same pan.
Fix It: Crust going soft in the middle? Bake the tortilla bare for 3 minutes first, then add the toppings and finish it.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 15 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
