Before You Start

Heat the oven to 400°F, slice the squash, mince the garlic, rinse the spinach, and pat the chicken dry so it colors up golden.

How To Make It
  1. Toss the chicken thigh and sliced summer squash with the olive oil, rosemary, and minced garlic.
  2. Spread them on a sheet pan in one layer with space between so they cook evenly.
  3. Roast 22 to 26 minutes, until the squash is tender and the chicken reaches 165°F in the center with clear juices.

  4. While the pan roasts, wilt the spinach in a dry skillet with a splash of water over medium heat, 2 to 3 minutes, until glossy and collapsed.
  5. Serve the chicken and squash over the hot white rice with the spinach alongside and a squeeze of lemon.
Fix It: If the chicken is not at 165°F yet but the squash is done, pull the squash and give the chicken a few more minutes on its own.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 26 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
