Before You Start

Pat the steak dry, cut the broccoli into florets, rinse the spinach, and grate the ginger.

How To Make It
  1. Warm a splash of water in a nonstick pan over medium high heat, about 1 minute, until it steams.
  2. Add the sirloin steak and cook, turning once, 6 to 8 minutes, until browned outside and the center reaches 145°F, then rest 3 minutes and slice thin.
    145°F
  3. Add the broccoli to the pan and cook, stirring, 4 to 5 minutes, until bright green and just tender.
  4. Add the spinach, ginger, and gochugaru and cook, 2 to 3 minutes, until the spinach wilts.
  5. Pour in the soy sauce, toss, 1 minute, until glossy, then top with the sliced beef and serve.
Fix It: If the beef is chewy, slice it thinner and across the grain so each bite stays tender.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
