Before You Start

Trim the asparagus and slice the scallions while the oven heats.

How To Make It
  1. Heat the oven to 425°F and line a sheet pan with parchment.
  2. Lay the salmon, asparagus and mushrooms on the pan; brush the salmon with the coconut aminos and ginger.
  3. Roast 12 to 14 minutes, until the salmon flakes and reaches 145°F and the asparagus is tender.
    145°F
  4. Scatter the scallions over the salmon.
  5. Serve over the wild rice with a squeeze of lemon.
Fix It: Thin asparagus done early? Take it off the pan and let the salmon finish.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 15 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
