Before You Start

Slice the chicken, grate the ginger, ribbon the carrot, trim the snap peas, and boil a kettle for the noodles so nothing stalls at the pan.

How To Make It
  1. Soak the rice noodles in hot water, 5 to 7 minutes, until soft and bendable, then drain.
  2. Heat the olive oil in a pan over medium high, about 1 minute, until it shimmers.
  3. Add the chicken and cook, stirring, 5 to 6 minutes, until no pink remains and it reaches 165°F in the center.

  4. Add the ginger, carrot, and snap peas and toss, 3 to 4 minutes, until the carrot softens and the snap peas are bright and just tender.
  5. Fold in the drained noodles, coconut aminos, and scallions, warm through 1 minute until steaming, and serve.
Fix It: If the noodles clump while they wait, rinse them under warm water and toss to loosen before they hit the pan.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
