Makes 1 plate Batch it

Before You Start

Dice the sweet potato small and cut the broccoli and cauliflower into small florets so everything finishes together.

How To Make It
  1. Heat the oven to 425°F and line a sheet pan with parchment.
  2. Toss the sweet potato with half the olive oil and roast 10 minutes, until the edges start to soften.
  3. Toss the chicken, broccoli, cauliflower and bell pepper with the rest of the olive oil, the cumin and the smoked paprika.
  4. Add them to the pan and roast 15 minutes more, until the chicken reaches 165°F in the center with no pink and the sweet potato is tender.

  5. Squeeze the lime over everything, scatter the cilantro and serve.
Fix It: Sweet potato still firm? Roast 5 minutes more and check again.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 25 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
