Before You Start

Pat the chicken dry and slice it thin, slice the zucchini into ribbons, slice the mushrooms, rinse the spinach, and grate the parmesan.

How To Make It
  1. Melt the butter in a skillet over medium heat, about 1 minute, until it foams.
  2. Add the sliced chicken and cook, turning, 6 to 8 minutes, until no pink remains and it reaches 165°F in the center, then set it aside.

  3. Add the mushroom and cook, 5 to 6 minutes, until browned and their liquid cooks off.
  4. Addand zucchini ribbons and cook, stirring, 3 to 4 minutes, until softened.
  5. Add the spinach and cook, 1 to 2 minutes, until it wilts.
  6. Pour in the heavy cream and stir in the parmesan, 2 to 3 minutes, until it makes a smooth, glossy sauce.
  7. Return the chicken, season with salt and pepper, toss to coat, and serve warm.
Fix It: If the sauce looks grainy, lower the heat and stir in a splash of cream; high heat is what makes it split.
