Before You Start

Pat the chicken dry and season it, cut the broccoli into florets, rinse the spinach, and gather the basil, garlic, and lemon for a quick blender sauce.

How To Make It
  1. Sear the chicken in the olive oil over medium heat, 5 to 6 minutes per side, until golden and it reaches 165°F in the center with no pink, then move it to a board to rest.
    165°F
  2. Steam the broccoli in a covered pan with a splash of water, 4 to 5 minutes, until bright green and just tender.
  3. Add the spinach to the pan and cook, 2 to 3 minutes, until it wilts.
  4. Blend the basil, garlic, a little olive oil, and a squeeze of lemon into a loose, pourable sauce.
  5. Slice the chicken and toss it in the basil sauce until well coated.
  6. Serve over the rice with the broccoli and spinach alongside.
Fix It: If the outside browns before the center reaches 165°F, lower the heat and cover the pan so it cooks through without burning.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 18 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
