One plate is the amount the calories and protein above are for.

Before You Start

Peel the jicama with a vegetable peeler, cut it into fries the size of your finger, and slice the tomato and red onion so the burger goes together in a minute.

How To Make It
  1. Heat the oven to 425°F. Toss the jicama sticks with the olive oil and smoked paprika on a parchment lined sheet pan and roast 20 to 25 minutes, turning once, until the edges are golden and crisp.
  2. Shape the ground beef into a patty a little wider than the bun and press a thumbprint into the middle.
  3. Cook the patty in a dry skillet over medium high heat 4 to 5 minutes a side, until browned and it reads 160°F in the center, then spoon off any fat and toast the sandwich thin in the pan 1 minute, until crisp.
    160°F
  4. Spread the mustard on the bun, stack the lettuce, patty, tomato and red onion, and serve with the jicama fries.
Fix It: Jicama fries still soft? Spread them out so no two touch and give them 5 more minutes; crowded fries steam instead of crisp.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 25 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
