What You Need

Before You Start

Pull the beef out 10 minutes ahead so it cooks evenly, shred the cabbage, slice the mushrooms, rinse the spinach, and mince the garlic.

How To Make It
  1. Warm a skillet over medium, add the ground beef, and cook, breaking it up, 5 to 6 minutes, until no pink remains and it reaches 160°F, then spoon off the fat so the dish does not go greasy.

  2. Push the beef to one side, add the olive oil and garlic, and cook about 1 minute, until fragrant and just golden.
  3. Add the mushrooms and cook, 5 to 6 minutes, until browned and their liquid has cooked off.
  4. Stir in the cabbage with a splash of beef broth, cover, and cook 8 to 10 minutes, until the cabbage is very soft and silky.
  5. Add the spinach and cook, 1 to 2 minutes, until it wilts, then season with the paprika, salt, and pepper, stir together, and serve warm.
Fix It: If the cabbage browns before it softens, add another splash of broth and keep the lid on so it steams tender.
