Before You Start

Measure the chia seeds and coconut water, rinse the mango, and grab a clean jar with a lid so you can chill it hands off.

How To Make It
  1. Stir the chia seeds into the coconut water in a jar until no dry clumps remain.
  2. Let it sit 5 minutes, then stir again to break up any clumps that settled to the bottom.
  3. Cover and chill in the fridge at least 4 hours or overnight, until it firms into a soft pudding.
  4. In the morning, stir in the maple syrup and lime juice, top with the diced mango, and serve cold.
Fix It: If it is still runny after chilling, stir in another spoonful of chia and give it 15 more minutes; it keeps thickening as it sits.
