What You Need
Makes 1 plate Batch it

Before You Start

Mix the batter first; it needs 10 minutes to rest.

How To Make It
  1. Whisk the chickpea flour, water, 1 tbsp olive oil, and salt until smooth, then rest 10 minutes.
  2. Heat the rest of the olive oil in a large skillet over medium-high heat for 1 minute, until it shimmers.
  3. Pour in the batter, scatter the rosemary on top, and cook 4 to 5 minutes, until the edges are crisp and the top is set.
  4. Flip and cook 3 minutes, until golden on the second side.
  5. Slide onto a board and cut into wedges.
Fix It: If it breaks when you flip, cook 1 more minute before flipping so the top sets.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 10 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
