What You Need
Makes 1 plate Batch it

Before You Start

Grate the carrot fine so it melts into the crumb.

How To Make It
  1. Heat the oven to 350°F and line a 12 cup muffin tin.
  2. Whisk the eggs, greek yogurt and honey together.
  3. Stir in the whole wheat flour, baking powder and cinnamon until just combined.
  4. Fold in the carrot and walnuts and spoon the batter into the cups.
  5. Bake 20 to 22 minutes, until a toothpick comes out clean.
  6. Cool 10 minutes in the tin before you lift them out.
Fix It: Muffins dry? Pull them 2 minutes earlier next time.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 22 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
